30% Cabernet Franc
Soil : clayey limestone and sandy gravel
Harvested by machine, the grapes are carefully sorted and
stalked before being pressed gently to extract the juice.
The alcoholic fermentation takes place in stainless steel
and ciment vat at between 30° to 32° with "pumping
over" . Then follows a period of maceration for 15 days to
3 weeks depending on the vintage. The second or malo-
lactic fermentation takes place once the juice has been
run off from the marc in cement vat . The wine is then fil-
tered before the bottling after some 12 months maturation
and ageing in tank-vat.
A wine of excellent quality/price ratio. Nice ruby colour,
a nose of berries and a delicate and elegant body with a
nice final. Tannins are not too much aggressive. Cabernet
Franc grown on Sandy gravel soil are well matured and
give to the wine a special spicy touch matching the
rounded taste of Merlot.
This wine is excellent with both red and white meats,
game and cheese.
